Hello May, Easy Nutella Mousse, Pies & Babies

Here is GA today the weather is not as bright and colorful as this picture! It's gray, windy and cloudy to start off the 1st day of May, but it won't stop all the fun May has to offer! We have some family pics coming up, a baseball game, work lab visit, Taylor's recital, reunion's, graduation parties and for those of us in the corporate world, the first holiday in almost 6 months....YES!!!!!!
You may remember me blogging before about my Mother In Laws amazing chocolate mousse, y'all this stuff is amazing! She makes it by request on your birthday if you are her favorite daughter in law, WINK, WINK!
I was scrolling through Facebook and got hooked on one of those cooking videos, you know where they pour everything in one bowl and make a meal. This one was a Nutella mousse and was very simple so I gave it a try!
I had my sous chief Taylor with me, the first bowl was heavy cream and sugar we mixed up into a whip cream. We combined it with the bowl of Nutella and cream cheese.
WOW!!!
Here is what it looks like after being in the fridge for about an hour. This is like heaven in a bowl.
I highly recommend making this yummy treat, we are loving it at my house right now! Here is the recipe from the website PureWow (note instead of Nutella I used Great Value Hazelnut Spread and saved myself a couple of bucks):

Ingredients

Mousse
8 ounces cream cheese, at room temperature
¾ cup Nutella (store-bought or homemade)
1 cup confectioners’ sugar
1 cup heavy cream
3 tablespoons sugar
1 teaspoon pure vanilla extract

Directions

1. In the bowl of an electric mixer fitted with the paddle attachment, cream the cream cheese with the Nutella and confectioners’ sugar until light and fluffy, 2 to 3 minutes. Transfer to a medium bowl; wipe out the mixer bowl.

2. In the bowl of the electric mixer, this time fitted with the whip attachment, whip the cream to soft peaks. Add the sugar and vanilla extract, and whip to medium peaks.

3. Add a third of the whipped cream to the Nutella mixture and fold with a rubber spatula to combine. Add another third of the whipped cream and repeat, folding until incorporated. Add the final third and fold to combine.
When I first started working at the front desk, I became fast friends with a coworker named Marc. He is like a big teddy bear, we always laughed a lot, often went out for lunch, loved Starbucks and football. He is one of the most generous and sweetest friends I have. About 2 years ago Marc started having some health problems, to make a long story short it was discovered he has ALS, AKA Lou Gehrig's disease. It's a progressive neurodegenerative disease that affects nerve cells in the brain and the spinal cord. Marc is no longer working and is at his home receiving great help, especially from his sweet wife Alice. Even battling this, Marc continues to stay positive and funny, he is an inspiration. We also share the same birth month, so every year we would exchange a fun gift. This year Marc surprised me with 8 delicious pies from The Best Dang Bakery in Woodstock. This picture does not even show half of the pies he sent over!
Everything from cherry, to apple, to lemon and a breakfast quiche. It was amazing. No one has ever done such a grand gesture like that for me, I was so thankful!!
Marc is friends with many people at work who all enjoyed the pies too. I am forever grateful for my friendship with Marc, lots of laughter and smiles thru the years!
Speaking of sweet friends, we stopped by to meet the newest addition to our sweet friends Karley and Skipper's family, baby girl Savannah Kate, isn't she beautiful?!
At six weeks old she was so tiny and beautiful! This is their 3rd girl, you know Karley is staying busy!! Congrats!
